Sauvignon blanc

Technical information

Gentle pressing, separating free run to hard press. To obtain the most aromatic wine possible, long alcoholic fermentation at low temperature and stopped before the malolactic fermentation. Wine is aged on fine lees to build texture. No fining. Only a sterile filtration prior bottling.

Vintage 2020

After consecutive drought years the 2020 growing season started with some wet weather that carried on until late spring. Ripe flavors at low sugar levels allowed us to pick early to retain the natural acidity in the juice compared to previous years. In what will ultimately go down as a ‘challenging’ vintage, unwavering vineyard Preparation delivered excellent fruit condition and flavor concentration.

Tasting notes

Pale straw with green hue. Lovely bouquet of melon and meadow flowers mingle with fresh lime, pineapple rind, passion fruit and a white spice nuance. This wine is well-balanced between fresh natural acidity and upfront fruit characters. Juicy fruit and a long finish add deliciousness and food friendliness.

Food pairing

Perfect match with seafood, salads, and spicy recipes, enhance citrus or garlic-based sauces. Great with goat cheese and feta.
